Serves 12 (1 burrito per medium flour tortilla).

  1. Prep the rice: Cook 1 cup of rice using preferred method.
  2. For the cheese sauce: Combine cottage cheese, salt, onion powder, cheddar cheese, and milk in a blender. Blend for 2 minutes and set in fridge.
  3. For the Beef: Place half the diced onion into a pan over medium heat, cook until translucent. Then add beef and taco seasoning. Once cooked, add tomato paste, cream cheese, 2/3 cup shredded cheddar cheese, black beans, and Tabasco.
  4. Assemble burritos. Add beef mixture, cheese sauce, rice, raw onion, and cilantro to a tortilla and roll to seal.
