- 2 lbs lean ground beef
- 1 onion
- Taco seasoning
- 4 cloves minced garlic
- 12 fresh flour tortillas
- 3.5 oz tomato paste
- 6 tbsp cream cheese
- 1 2/3 cup low fat cottage cheese
- 1/3 cup low fat milk
- half cup shredded cheddar
- onion powder
- 1/4 tsp Tabasco
- 1 cup dry rice (3 cups cooked)
- 1 can black beans

Serves 12 (1 burrito per medium flour tortilla).
- Prep the rice: Cook 1 cup of rice using preferred method.
- For the cheese sauce: Combine cottage cheese, salt, onion powder, cheddar cheese, and milk in a blender. Blend for 2 minutes and set in fridge.
- For the Beef: Place half the diced onion into a pan over medium heat, cook until translucent. Then add beef and taco seasoning. Once cooked, add tomato paste, cream cheese, 2/3 cup shredded cheddar cheese, black beans, and Tabasco.
- Assemble burritos. Add beef mixture, cheese sauce, rice, raw onion, and cilantro to a tortilla and roll to seal.
